I am on a iMac Pro. I understand that a USB to XLR cable will not work with the microphone, so I'm hoping that the headphone jack can be used instead.
Can you recommend a headphone to XLR cable that will work with the microphone?

Thanks for your post, and our apologies for the belated response to it!
You will want to use an XLR to XLR cable that can supply phantom power to the measurement microphone as well as an audio interface that provides phantom power. USB microphones are not supported.
