I keep getting notified to update to the newest version of the software, so I run the software installer and it completes. Afterwards the app relaunches and nothing's changed and I get the update notification again.

I hope you are doing well!
If you are running macOS 10.13 to version 10.15., then the final version for the particular operating system will be installed.
Please find your compatible version here: SoundID Reference software releases (component matrix and support status).
What you could do is disable the automatic update check under the preferences.
